Good for You! Pancakes

Note: This is an easy recipe for kids to make.
 
Pancake Mix
 
You will need:
large bowl, measuring cups and spoons, spoon for mixing, airtight container.
6 c. whole wheat flour
1/2 c. soy flour or wheat germ
3 T. baking powder
1 t. salt
2 c. dry milk powder
 
Mix all ingredients in bowl.
 Pour into an airtight container.
Store in dry place for future use.

Pancakes
 
You will need: 
Medium or large bowl
measuring cups and spoons
spoon
skillet or large griddle
spatula
 
2 c. basic pancake mix (above)
4 eggs beaten
1 to 2 c. water
1 t. oil
 Makes 12 to 16 - 5 inch pancakes
(We double this)
 
Preheat skillet or griddle.
Put mix in bowl.
Add beaten eggs, water and oil
Mix well.
Pour onto griddle.
Turn when surface is bubbly.
Cook a few more minutes till golden brown.
Serve with maple, blueberry syrup or healthy peanut butter.
 
Yummy tip: We add fresh blueberries to the pancakes!!
 
We went to a local blueberry farm last week and picked 30 pounds of blueberries in one hour. That doesn’t count how many pounds we ate during picking. Even Micah would reach out from my backpack and pick and eat whatever he got in his hands, even green ones. :-) ~Amy

Mamma's Favorite Pancakes

Ingredients:

4 cups milk (and extra to add later)
1 stick (8 Tbsp.) melted butter
4 eggs
4 cups flour
8 teaspoons baking powder
1/3 cup + 2 Tablespoons sugar (can substitute with honey)
2 teaspoons salt

Directions:

1. Mix together first three ingredients.

2. Blend dry ingredients and add to the first mixture; mix thoroughly.

3. Bake on griddle at 350°.
